But somewhere along the way, a "southern gene" must have taken hold because lordy-lordy, I do love okra. (And grits. But that’s a story for another day.) In late summer, okra’s small finger-shaped pods come off the plants by the basketful, so precious: the arrival of the first okra is greeted with the same excitement as the season’s first asparagus, the first sweet corn, the first beets, the first tomatoes, the first butternut squash.

The soy sauce plus the oyster sauce and the fish sauce is a trio combination of umami seasonings that combines Viet and southern Chinese cooking. The method of frying the garlic and shallot till they are golden is a good Viet approach, where caramelized shallot and garlicky goodness is greatly appreciated. And adding the sauce twice is actually a restaurant method to layering flavor. There is no velvety sauce since we will not be using cornstarch, this is a Viet-Chinese approach to stir frying. Let us start cooking then. The original recipe can serve 2 to 3 p3ersons as a main course.

INGREDIENTS:

1 ¼ pounds fresh asparagus, the woody ends are snapped off, and the stalks are cut into 2 inch long pieces.

½ teaspoon sugar

1 ½ tablespoons fish sauce

2 teaspoons soy sauce

1 teaspoon oyster sauce

4 tablespoons and a half teaspoon of vegetable oil, separated accordingly

1 tablespoon minced garlic

8 to 10 ounces, peeled deveined large shrimps, or may be a few more if desired

1 shallot, thinly sliced

1 teaspoon Shaoxing cooking wine or sherry

¼ teaspoon coarsely ground pepper

THE PROCEDURE:

Wash the asparagus with water, then drain and set aside.

For the stir fry sauce, combine in a small bowl and stir together the sugar, the fish sauce, the soy sauce the oyster sauce and the ½ teaspoon of vegetable oil. Stir to mix until they are smooth enough and set aside near the stove.

To start stir frying, heat a wok or a large skillet to medium high heat over your American stove. Then once hot, pour in 2 tablespoons of vegetable oil into the wok and wait till it starts to get hot enough. Then you can add the garlic and stir fry them for about 15 seconds, until the garlic begins to brown a little.

Here you can add the shrimps and cook them for about 30 seconds. Add 1 tablespoon of your prepared seasoning, combine and cook for approximately 2 minutes until the shrimps are nearly cooked through. Then please transfer them to a plate and set aside.

Then rinse and wipe clean your wok. Heat the pan again on high heat then add the remaining 2 tablespoons of vegetable oil. Then you can add the shallot, cooking them for another 1 minute until they are a little browned.

Then you can add the asparagus and pour in the remaining seasoning sauce you have prepared. Stir fry the asparagus until they are tender but slightly crunchy, for another 3 to 5 minutes.

Add the shrimps back to the wok and continue stir frying to reheat them. Shut off the heat from the stove and add the rice wine and stir a little bit to mix.

Serve immediately while they are hot.

Into the back of the potato skins, put the crab and potato mixture. Then top it up with lumpfish roe and mayonnaise. Garnish with chervil. Serve the dish immediately.

Pasta - 50 gramsChopped, smoked salmon - 150 gramsSour cream - 150 milliliterChives - 1 spoonLumpfish roe - 50 gramsSalt and fresh ground pepper for seasoning

Preparation: Cook and then drain the pasta. Toss it with cream, smoked salmon along with chives. Serve it in soup bowls, topped with 1 spoon of lumpfish roe. Season it with pepper and salt. Serve this dish immediately.

Eggs - 2Olive oil - 60 milliliterPlain yogurt - 125 milliliterMilk - 125 milliliterGrated lemon zest - 1 spoonSelf-rising flour - 375 gramsSugar - 1 teaspoonCreme fraiche - 250 gramsSmoked trout - 1 smallLumpfish caviar - for serving

½ teaspoon sugar

1 ½ tablespoons fish sauce

2 teaspoons soy sauce

1 teaspoon oyster sauce

4 tablespoons and a half teaspoon of vegetable oil, separated accordingly

1 tablespoon minced garlic

8 to 10 ounces, peeled deveined large shrimps, or may be a few more if desired

1 shallot, thinly sliced

1 teaspoon Shaoxing cooking wine or sherry

¼ teaspoon coarsely ground pepper

THE PROCEDURE:

Wash the asparagus with water, then drain and set aside.

For the stir fry sauce, combine in a small bowl and stir together the sugar, the fish sauce, the soy sauce the oyster sauce and the ½ teaspoon of vegetable oil. Stir to mix until they are smooth enough and set aside near the stove.

To start stir frying, heat a wok or a large skillet to medium high heat over your American stove. Then once hot, pour in 2 tablespoons of vegetable oil into the wok and wait till it starts to get hot enough. Then you can add the garlic and stir fry them for about 15 seconds, until the garlic begins to brown a little.

Here you can add the shrimps and cook them for about 30 seconds. Add 1 tablespoon of your prepared seasoning, combine and cook for approximately 2 minutes until the shrimps are nearly cooked through. Then please transfer them to a plate and set aside.

Then rinse and wipe clean your wok. Heat the pan again on high heat then add the remaining 2 tablespoons of vegetable oil. Then you can add the shallot, cooking them for another 1 minute until they are a little browned.

Then you can add the asparagus and pour in the remaining seasoning sauce you have prepared. Stir fry the asparagus until they are tender but slightly crunchy, for another 3 to 5 minutes.

Add the shrimps back to the wok and continue stir frying to reheat them. Shut off the heat from the stove and add the rice wine and stir a little bit to mix.

Serve immediately while they are hot.

PROCEDURE:

In another large kettle, you can combine all the ingredients. Bring the kettle to a boil and then lower the heat to simmer for another 1 ½ to 2 hours, until the fruit falls apart and the syrup is quite thick enough. Please stir them frequently to avoid scorching or burning.

Pour the puree into a hot ½ pint jars leaving ½ inch head space, and then seal and process in a boiling water bath for 10 minutes. Remove the jars from the bath and cool them off. Once cold off, you can store them in refrigerators and they will last until you finish them to the last drop.

2. THE CHINESE SZECHUAN STIR FRY SAUCE:

Ingredients:

one ½ teaspoon sesame oil

½ teaspoon minced fresh ginger

½ teaspoon minced garlic

1/3 cup chicken broth

2 whole anise stars

1 ½ teaspoon red wine vinegar

one tablespoon soy sauce

½ teaspoon salt

one teaspoon hoisin sauce

1/8 teaspoon Tabasco sauce

1/8 teaspoon red pepper flakes, crush them into bits

¼ teaspoon pepper

1/8 teaspoon 5 spice powder

one tablespoon of water with dissolved 2 teaspoon cornstarch

PROCEDURE:

Heat the oil into a small sauce pan. Add the ginger and garlic and saute for about 12 minute, until softened but not brown. In another bowl, please combine the remaining ingredients, saving the cornstarch mixture for later. Add them to the saucepan and bring to a simmer, covered, for about 10 minutes. Remove the star anise. Whisk in the cornstarch mixture and let it boil for another 1 to 2 minutes. Taste and add more Tabasco of desired. This is now ready for any stir fry cooking.

INGREDIENTS:

¼ cup Mirin or semi sweet white wine, like Riesling¼ cup orange juice2 tablespoons rice vinegar¼ teaspoon red pepper flakes¼ cup low sodium soy sauce¼ cup water2 tablespoons canola oil8 ounces beef round steak, sliced into ¼ inch thick strips3 cloves of garlic, peeled minced2 cups fresh snow peas (about 6 ounces)1 large bunch broccoli (1 ¼ pounds) trimmed and cut into small floretsA bunch of asparagus (about 1 pound), trimmed and sliced into diagonal 2 inch pieces2 cups (about 8 ounces) frozen shelled edamame1 ½ teaspoons cornstarch dissolved in ¼ cup warm water1 teaspoon sesame oil

PROCEDURE:

Combine the Mirin or the white wine, the orange juice, the soy sauce, the rice vinegar and red pepper flakes and water in a small bowl. Mix until they are smooth. Set aside.

In a large wok or skillet (about 14 inches wide), saute the pan, heat 1 tablespoon of the canola oil over medium high heat. Add the beef and stir fry until just browned for about 2 minutes that will be 1 minute on each side for a uniform cooking. Then transfer the beef to a clean plate and set aside.

Heat the remaining canola oil over medium high heat. Add the garlic and cook until it is fragrant for about 30 seconds. Add the snow peas, broccoli florets, the asparagus and the edamame. Raise the heat to medium high, and stir fry for another 3 minutes until the veggies are slightly softened.

Then add the Mirin-soy sauce mixture and cook, stirring until the edamame are cooked and the asparagus are crisp tender for about 4 minutes more. Let the sauce coat the vegetables by continues stir frying.

Then add the beef back to the skillet and the dissolved cornstarch and stir fry to coat and mix with the vegetables. Continue stir frying until the mixture thickens slightly and the beef is heated through enough for about 2 minutes more.

Drizzle with sesame oil and serve immediately while it is hot.

Great with the steam cooked white rice.

How to Prepare Fluffy American Pancakes?

Do you like pancakes? Have you ever tried American pancakes? They are a little more thick and fluffy than the usual ones. I personally love them and will share a very nice recipe for them. You will definitely like it.

Here it is:

Needed products:

135g plain flour1/2 tablespoon salt1 tablespoon baking soda2 tablespoons caster sigar130 ml milk1 large or 2 small eggs, very lightly beaten2 tablespoons melted butter, plus some olive oil for cooking

Preparation:

Step 1: Take two large bowls. Put the baking soda, flour, salt and caster sugar into one of them. Mix the milk and egg in the other bowl, stirring carefully, and add the melted butter. Mind that the butter has to cool down a little bit before your add it to the egg and milk.

Step 2: Mix the milk mixture with the flour one and beat with a fork until you get a smooth batter. There shouldn't be lumps in the bowl, so do your best to beat the mixture well. Leave the batter for ten minutes to rest a bit.

Step 3: Take some kitchen paper and soak it with olive oil. Put a non-stick frying pan on the stove and heat it up over a medium heat. Rub the pan with the piece of kitchen paper, being careful not to burn yourself, and add a ladle of batter. The batter might look too thick, but that's how it should be. Cook the pancake until its top side starts bubbling and turn it over. Bake until golden brown on both sides. Each pancake has to rise to about 1 cm thick. Repeat the procedure until you're out of batter.

Step 4: Consume the pancakes while they are still warm, covered with maple syrup and some extra butter. If you want you can eat them with strawberry or other type of jam.

This is a wonderful recipe, but mind that the pancakes won't taste good if you cook them in a dirty kitchen or pan. They will absorb the odours from the room and will be awful. FOR THE STIR FRY:

1 pound boneless, skinless chicken breast, already sliced thin into strips

Salt to taste only

1 tablespoon rice bran oil, or canola

1 teaspoon fresh gingerroot, peeled and minced and sliced

2 teaspoon garlic, peeled and minced and chopped

1 cup sugar snap peas

1 cup of carrots, peeled and sliced into strips diagonally

Scallions to garnish

THE PROCEDURE:

In a small bowl, combine the soy sauce, the water, the lime juice, and the cornstarch. Stir them until they are smooth and the cornstarch is fully dissolved and set it aside.

Then season your chicken breast strips with salt.

Heat a large skillet or a wok over high heat. Wait until the wok is very hot, then add half of the oil and then add the chicken strips sizzling in your wok. Stir fry them occasionally until the chicken is cooked through and browned, for about 3 to 4 minutes. Remove the chicken from the wok with a slotted spoon into a plate and set aside. Reduce the heat to medium now.

Add the remaining oil into the wok. Then add the garlic and the ginger, and stir for 20 seconds. Then you can now add the sugar snap peas and the carrots or any other veggies that you may wish to add, and stir over medium high heat, until they are crisp-tender, for 3 to 4 minutes.

Return the chicken to the wok, and add the soy sauce-lime juice mixture. Mix them well and cook for 30 seconds to perhaps 1 minute. Serve immediately while they are hot.

My First Encounter With Tiramisu on my Trip to Italy

When I visited Italy, I learnt about Tiramisu and I have never since been able to forget this rather wonderful dessert. Since most Italian dishes are very delicious and quite elaborate, at the end of such a meal, a worthwhile dessert is usually necessary. It is for this reason that Italians are actually very famous for their desserts.

Tiramisu is simply an Italian dessert that is created with ladyfingers that are dipped in coffee. These are then layered with egg yolk and mascarpone cheese having been whipped together. Cocoa is often used to add flavor to the dessert. The exact recipe for this dessert has been used to create several other cakes, puddings as well as desserts. It has also been slightly modified in many parts of the world to attain different tastes of the dessert.

Occasionally I add Marsala wine to the recipe. I have also learnt that there are other liquors that can be added to the mixture both in the case of the cheese mixture as well as the coffee mixture. Some of the liquors that can be added include Port, Brandy, Irish Cream and Madeira.

The best part about cowboy style cooking is that it's easily approachable, and heart fulfilling. A common ingredient used in this type of cooking are not much different but they usually involve a lot of quail, goat or duck probably because this is what is indigenous to the Texas region. Also, a major part of cooking involves beef, pork chops, steaks with light salads fresh from the fields and creamy desserts. Texas Garlic Brown Chicken Texas Garlic Brown Chicken is an easy-to-cook meal with a preparation time not more than ten minutes. Twenty minutes or so can be consumed for the cooking to take place. Now this could easily be the time you can meddle in other dishes to complete the feast for your family like soups and dessert courses. The following recipe can easily serve up to 6 people. Brown Sugar, 4 tsp unpackedchicken breast, no skin, 12 ouncesGarlic, 1 cloveButter, salted, 2 tbspSalt, 1 tspPepper, black, 1 dashMelt some butter over low heat in a pan and when the butter has melted, add garlic. Allow it to turn brown and then add chicken breast pieces. Add seasoning according to taste. When the chicken is properly cooked, add brown sugar over each piece. Allow the sugar to melt and cook for another five minutes. Serve the sticky chicken with salad or it goes best simply with beans. Crispy Ranch Chicken The amazing spicy dish can be made very easily once you get hold of the ingredients. Remember the key ingredient for the taste of this delicious delight is the ranch dressing mix. It may be a little hard to find but without it you may not be able to achieve the right taste like visiting Disneyland without a go on the rides. 4 boneless skinless chicken breasts1 ounce per kg ranch dressing mix2 cups crispy rice cereal1/4 cup grated parmesan cheese2 egg whites(beaten)2 tablespoons light butter (optional)Simply add the parmesan cheese to the ranch mix and rice cereal and some seasoning according to taste. Mix well and set aside. Dip chicken breast pieces in egg whites, and then in the cereal to form a coating. Slightly grease the baking sheet and spread the pieces evenly. Chinese Influence On South-East Asian Cuisine

South East Asia measures nearly two million square miles across, holds a population of over 600 million people and includes 10 different countries. Yet if you look at the noodle soups of Vietnam or the fried rice found in Singapore, there's one thing that these cuisines all share - influences from Chinese culture, something that chefs at School of Wok make it their job to know a lot about.

This influence of Chinese culture in no way means that each country and region does not possess it's own unique traditions and flavors with their own cuisine, but it's undeniable that you can see elements of Chinese flavors and techniques wherever you look.

Woks, which originated from the Canton region of China, are the most common and versatile of the cooking utensils used across SE Asia, in which foods can be stir-fried, steamed, deep-fried, braised or even smoked. In fact, the Chinese are said that have brought their stir-frying methods to the rest of the continent as merchants traveled across the region for thousands of years.

As for the food of SE Asia, rice and noodles, now fundamental ingredients across the region, were originally Chinese foods that later found their way into kitchens further south. These ingredients are now considered to be staples across the whole region, and take their place among national dishes of many SE Asian countries - such as Vietnam (Pho), Thailand (Pad Thai) and Malaysia (Nasi Lemak).

Furthermore, the cuisines of the South East would be completely different without soy sauce, which was invented in China sometime between the third and fifth centuries. The influence of Chinese culture on the rest of SE Asia can be plainly seen through the use of this indispensable condiment with the majority of meals using it in one way or another.

More recently as example of Chinese influence, dim sum, unarguably a Chinese invention, has spread across the continent with steamed buns and boiled dumplings being served across the region, updated with each country's individual twist.
