Chinese Influence On South-East Asian Cuisine

South East Asia measures nearly two million square miles across, holds a population of over 600 million people and includes 10 different countries. Yet if you look at the noodle soups of Vietnam or the fried rice found in Singapore, there's one thing that these cuisines all share - influences from Chinese culture, something that chefs at School of Wok make it their job to know a lot about.

Woks, which originated from the Canton region of China, are the most common and versatile of the cooking utensils used across SE Asia, in which foods can be stir-fried, steamed, deep-fried, braised or even smoked. In fact, the Chinese are said that have brought their stir-frying methods to the rest of the continent as merchants traveled across the region for thousands of years.

As for the food of SE Asia, rice and noodles, now fundamental ingredients across the region, were originally Chinese foods that later found their way into kitchens further south. These ingredients are now considered to be staples across the whole region, and take their place among national dishes of many SE Asian countries - such as Vietnam (Pho), Thailand (Pad Thai) and Malaysia (Nasi Lemak).

Furthermore, the cuisines of the South East would be completely different without soy sauce, which was invented in China sometime between the third and fifth centuries. The influence of Chinese culture on the rest of SE Asia can be plainly seen through the use of this indispensable condiment with the majority of meals using it in one way or another.

More recently as example of Chinese influence, dim sum, unarguably a Chinese invention, has spread across the continent with steamed buns and boiled dumplings being served across the region, updated with each country's individual twist.

Filling :

3 almonds (badaam) - crushed roughly with a rolling pin - 1 tbsp mint (poodina) leaves -chopped - 1 green chilli -remove seeds and chop - 4tbsp grated paneer - ¼ tsp salt or to taste ,1/4 tspgaram masala

¼ tsp red chilli powder - a pinch dried mango powder (amchoor)

Covering:

½ cup thick curd (dahi) - hang in a muslin cloth for 30 minutes , 1 tbsp ginger paste, ¼ tsp red chilli powder , ¾ tsp salt , ¼ tsp red or orange tandoori colour or turmeric (haldi)

BHARWAAN ALOO MASALA

One tsp black cumin (shah jeera), Seeds of 2 brown cardamoms (motielaichi), 6-8 pepper corns (sabot kali mirch), 2-3 blades of mace (javetri)

Boil potatoes in salted water till just tender. Do not over boil. When they are no longer hot , peel skin.For the filling ,mix crushed almonds with mint leaves , green chillies , grated paneer, salt, garam masala, red chilli and amchoor.Grind or crush shah jeera, seeds of motielaichi, pepper corns and 2-3 pinches of javetri to a coarse powder.To the paneer filling, add ¼-1/2 tea spoon of the above freshly ground masala powder also. Keep the leftover powder aside.For the covering , mix hung curd , ginger paste, remaining freshly ground masala powder , red chilli and salt . Add halide or orange color.Run the tip of a fork on the back surface of the potatoes, making the surface rough.(The rough surface holds the curd well). Cut each potato into 2 halves, vertically. Scoop out, just a little, to get a small cavity in each potato with the back of a teaspoon. Stuff with pannier filling.With a spoon apply the curd on the back and sides of the potato.Grill potatoes in a gas tandoor or a preheated oven for 15 minutes on a greased wire rack till they get slightly dry.Spoon some oil or melted butter on them (baste) and then grill further till the coating turns absolutely dry.Sprinkle some chat Machala and serve hot.Gaurav inspired dine in Indian Food they had been opened for four and a half years and that their dishes were inspired from various styles and regions in melbourne indian resturants . Pasta Dishes For Enjoyable Mealtime

Preparation: In salted water, boil the pasta. In the last 2 minutes, add the kale and then drain it. Reserve a little of the cooking water. Meanwhile, in a non-stick pan, dry fry the bacon till it turns crispy. Take it off from the pan and then drain off the fat. Leave behind about one teaspoon of fat. Fry the onion gently in the fat for 3 minutes till it becomes soft. Into the pan, tip the kale and the cooked pasta. Then, stir in the cheese and the bacon. If the mixture is dry, then add a little bit of the pasta cooking water. Serve the dish in a bowl, scattered with grated parmesan, if you prefer.

Asparagus cream pasta

Ingredients:

Asparagus - 1 bunchDouble cream - 142 millilitrePeeled garlic cloves - 2Half shaved, half grated parmesan - 50 gramsTagliatelle - 250 grams

Preparation: Cut off the woody ends of the asparagus to prepare them. Then you should neatly cut the tips off from the stalks. Keep the stalks and the tips separately. In a saucepan, bring the garlic and cream to z boil. Remove it from the heat and take off the garlic and keep it aside. In the boiling salted water, cook the stalks for 5 minutes till they become tender. Drain them and then add them into the cream along with the grated parmesan. Whisk with a hand blender till it becomes smooth. According to the instructions on the pack, cook the pasta and then add the tips towards the last 2 minutes of the cooking time. Reheat the cream gently. Drain the pasta and then add it into a bowl along with the cream. Toss them till all is mixed well. Divide into pasta bowls. Before serving top it with parmesan.

Cheery Chocolate Milkshake

Ingredients:

Frozen yogurt or vanilla ice cream - 4 spoonsCold milk - 3/4 cChocolate syrup - 1/4 cMaraschino cherries - 3, stems removedAdditional cherry and whipped topping

Preparation: In a blender, place chocolate syrup, milk, ice cream and cherries. Blend it till it becomes smooth. Garnish with cherry and whipped topping.

Vanilla Milkshake

Ingredients:

Vanilla ice cream - 3 spoonsMilk - 1 1/2 cVanilla extract - spoonSugar - 2 tsp

Preparation: Combine milk, ice cream, sugar and vanilla in a blender. Blend it till it turns smooth.

Peanut Butter Chocolate Milkshake

Ingredients:

Peanut butter - c Chocolate syrup - 1/4 c Milk - 1/4 c Ice cubes - 12

Preparation: Combine chocolate syrup, peanut butter, ice cubes and milk in a blender and blend it till smooth.

Jelly and Peanut Butter Milkshake

Ingredients:

Peanut butter - spoon Jam or jelly - 2 spoons (strawberry, grape or raspberry) Milk - 1/2 c Vanilla ice cream - c

Preparation: Combine jelly and peanut butter well and place it in blender. Add ice cream and milk. Then blend it till it becomes smooth.

Whoppers Malt Shake

Ingredients:

Frozen yogurt or vanilla ice cream - 3 spoons Cold milk - 1/3 c Chocolate malt syrup - 3 spoons Whipped cream topping

Preparation: In a blender, place milk, ice cream and chocolate malt syrup. Blend it till it turns smooth. Garnish it with cherry and whipped topping.

Chocolate Shake

Ingredients:

Vanilla or chocolate ice cream - c Whole milk - 1/2 c Chocolate syrup - 4 spoons

Preparation: In the canister of blender, put all the ingredients and blend them till it turns smooth.

Chunky Milkshake

Ingredients:

Vanilla ice cream - 3 spoons Chocolate chips - 2 spoons Banana - 1/2 Instant coffee - spoon Chocolate syrup - 2 spoons Milk - c Vanilla - 1 tsp

Four-member committee formed to investigate Musharraf treason charges

Committee formed


Pakistan's Interior Minister, Chaudry Nisar, told parliament on Thursday that a four-member committee had been appointed to investigate treason charges against former president Pervez Musharraf (AFP, Dawn, VOA).  Nisar did not reveal the names of the committee members but said that they were all officers from the Federal Investigation Agency.  The committee will be investigating charges that Musharraf subverted the Pakistani constitution when he imposed emergency rule and dismissed judges in 2007.


A Pakistani official told Dawn reporters on Thursday that government negotiators remain engaged with the Taliban leadership in an effort to get the Doha peace process back on track after the controversy surrounding last week's opening of a Taliban office in Qatar (Dawn, Pajhwok).  The official added that they are trying to persuade the Taliban to "get on" with the talks with U.S. and Afghan representatives.  Dr. Mohammed Naeem, a spokesman for the Taliban office in Doha, posted the transcript of an interview that indicated the group is moving towards the start of talks and that they "will be conducted will all sides involved in Afghanistan."


Sharat Sabharwal, the Indian High Commissioner to Pakistan, met with Jamiat Ulema-i-Islam party leader Maulana Fazlur Rehman on Thursday and said that India will soon engage with Prime Minister Nawaz Sharif's government (Dawn).  Sabharwal indicated the dialogue would focus on resolving outstanding issues between the two countries, including bilateral trade and their respective visa programs.  An unidentified senior Pakistani government official said that a retired diplomat will soon be appointed to pursue 'backdoor diplomacy' with its neighbor (ET). 


At least four people died and 11 were injured in Karachi on Friday when unidentified gunmen opened fire in the city's Kharadar neighborhood (ET).  The incident created panic in the area and all business activities came to a halt.  A heavy police contingent is in the area, monitoring the situation, but there have been no claims of responsibility.


Detainee transfers


British authorities transferred the first 10 detainees from their facilities at Camp Bastion in Helmand province to an Afghan facility at Bagram Airfield in Parwan province on Thursday night (BBC, Pajhwok).  The detainees' transfers had been banned in November 2012 due to concerns that they would be abused in the new facility but after receiving "positive reports" from multiple humanitarian organizations, U.K. Defense Secretary Phillip Hammond lifted the restrictions.  Eighty-two detainees currently remain at Camp Bastion, but the Ministry of Defense is hoping to transfer them soon.


Three hundred members of the Afghan Local Police (ALP) are deploying to the Koh-i-Safi district of Parwan province on Friday, according to a government official (Pajhwok).  The presence of the ALP members was requested by local tribal elders, who are tired of ongoing harassment from militants, particularly at night.  It is unclear how long the ALP force will be in the area but local recruits are hoping to improve the area's security by setting up checkpoints and restoring security to residents.


In an op-ed for the Friday New York Times, Husain Haqqani, a former Pakistani ambassador to the United States, implores the United States not to negotiate with the Taliban, saying that "they are a movement with an extreme ideology and will not compromise easily on their deeply held beliefs" (NYT).  Haqqani writes that direct dialogue with the group will give them a source of international legitimacy, and that they are most likely just playing for time until coalition troops withdraw in 2014.  His piece follows similar reports that say the Taliban, the United States, Afghanistan, and Pakistan for that matter, have different visions for what the talks will or should produce and that those differences are actually the biggest hurdles to the talks (Reuters). 


Afghanistan's Got Talent 


Simon Cowell's Syco Entertainment and FremantleMedia are bringing their popular "Got Talent" format to Afghanistan, according to the Hollywood Reporter (HR).  "Afghanistan's Got Talent," the 55th local adaptation of the show, will launch on the 1TV Media channel later this year and comes after recent launches in Brazil and Kazakhstan.  A source close to the project told reporters that "There may be a war raging in Afghanistan - but people are still living their lives and they enjoy watching TV just like anyone else (Metro). The judges have not yet been announced.
